Mojito chicken marinade for BBQ season
We had lots of fun at our Cuban Supper pop-up night in West Wickham last Friday, and lots of our guests on the evening asked us to share our recipe for the Mojito marinated chicken. So, here you go :) For best results, marinate the chicken over night in two thirds of the marinade, and then reserve the rest in a clean jar stored in the fridge to give the chicken skin a brush just before serving.
2 teaspoons cumin powder
3 garlic cloves (minced)
1 teaspoon mild chilli powder
1 teaspoon sea salt
2 tablespoons olive oil
Juice of 1 lemon
Juice & finely grated zest of 2 limes
2 tablespoons fresh mint (finely chopped)
- Makes enough marinade to coat 4 chicken thighs -
1. Add all of the ingredients in to a clean jam jar, give a good shake and then it's ready to use!
